An outstanding historian and renowned specialist in the subject of the history of food. He is the author of the book Puerto Rico en la Olla: ¿Somos aún lo que comimos? (2006), publication awarded by the Puerto Rico PEN, and Eating Puerto Rico: A History of Food, Culture and Identity (2013). Founder of the interdisciplinary study group on Food Intelligence food, and independent consultant in food studies. In 2018 he was incorporated as a (Académico de Número) Number Scholar to the Puerto Rican Academy of History. He is a retired professor at the University of Puerto Rico, Humacao Campus and currently serves as a guest professor in the Interdisciplinary Studies program of the Faculty of Humanities of the University of Puerto Rico, Rio Piedras Campus. In addition, he belongs to the Board of Directors of the Visit Rico organization.
